Rhubarb is one of the undemanding garden plants. He just needs enough water. The first rhubarb stalks can be harvested early in the year and processed into juice or compote. However, it is only harvested until June 24th, as the oxalic acid in the rhubarb continues to rise and makes the plant inedible.

Juice the rhubarb
When juicing rhubarb, you can choose between cold and hot juicing.
The cold juicing
Cold juicing rhubarb can be a tedious task. Its stalks are extremely fibrous and quickly clog the juicer. The constant cleaning lengthens the juicing process quite a bit. If it is possible to press rhubarb juice cold, it still has to be heated before consumption to render the oxalic acid harmless. For this reason, hot juicing rhubarb is preferable to cold juicing.
The hot juicing
Here you have the option of juicing in a cooking pot or in a juicer. In both cases, wash the rhubarb stalks and cut them into small pieces.
- Put the pieces in a large pot and let them simmer until a thick mush is formed. Don't forget to stir as the rhubarb may burn.
- Place a large cheesecloth over a bowl and secure.
- Pour the mousse into the cloth and let it drain for at least 24 hours.
- In the meantime, sterilize some swing top bottles.
- Boil the rhubarb juice again before bottling and add sugar to your taste.
- Fill the juice and close the bottles immediately. The juice will keep for some time, but once opened it should be consumed within a few days.
In addition to juicing in a saucepan, the rhubarb can also be juiced in a steam juicer.
- Cut the washed rhubarb into small pieces.
- Fill the bottom container of the juicer with water and place the juice collection container on top.
- Fill the vegetable pieces into the fruit basket and place it on the collecting container.
- Now heat the steam juicer on the stove. After about an hour, the drain tube will fill with juice.
- Sugar the juice and fill it in sterile bottles.
