Olive herb is evergreen and keeps its leaves on the stems even in the cold season. So nothing stands in the way of a harvest even in icy January. This herb is actually also the most aromatic when fresh. Holy herb can be dried, but it loses a lot of its olive-like aroma.

Can cut branches be frozen?
You have to cut the olive herb regularly. This puts you in the following situation:
- many young shoot tips are removed
- all are wonderfully suited as cooking ingredients
- the twigs do not stay fresh for long in water
- they are far too valuable for the compost heap
The good news is: the Mediterranean herb freezes well. Besides pickling in vinegar, freezing is the best way to preserve olive herb.
Prepare immediately for the freezer
Do not leave the branches you cut off for long. If it is clear that they cannot be used up fresh soon, they should be put in the freezer as soon as possible. This requires some preparation beforehand:
- Rinse the herb under the tap, even if it looks clean.
- Then let it dry or dry it with kitchen paper.
- Pluck the fine leaves from the stems.
- If it's better for later use, chop them up.
- Place the aromatic leaves in a freezer bag. Larger quantities can be divided into several bags.
- Squeeze out the air and label each bag with the contents and date.
- Put the herbs in the freezer immediately.
Notice:
You do not need to freeze the flowers of the olive herb. They are not edible fresh because their consistency is too firm. Even after freezing, they will not turn into a delicacy.
How to consume frozen olive herb
If necessary, only get as much of the olive herb from the chest as you need for cooking. You can add it to the cooking food in the frozen state. However, you should do this just before the end of cooking, since olive herb loses a lot of its flavor after long cooking.
Olive herb can be stored in the freezer for up to 12 months.
