Mountain savory is capable of living for several years. In order for it to please us for more than a year, it has to get through the winter healthy. When the first frost approaches, the question of survival arises: Where are the limits of what can be endured?

It bravely defies the cold
When the cold winter announces its coming, mountain savory is well prepared for it in this country too. It has good winter hardiness. Therefore, new shoots can be reliably expected in spring.

In autumn, only cut back mountain savory to the woody part. The remaining aerial parts protect the base from the cold. The fine cut can only be done in spring.
Protect from extreme cold
Winter hardiness or not, no plant likes to freeze. In rough locations or during particularly icy periods, the mountain savory gratefully accepts suitable protective measures. A layer of brushwood keeps freezing temperatures at bay.
The herb does not like wetness
Our winters can't just be icy cold. They also bring many wet days with them. The plants are then completely enveloped in moisture. It is this that the mountain savory does not like at all. Especially if this condition lasts for many days and the plant does not have the opportunity to dry off in between.
Brushwood is also a good protective measure when it is wet. It should therefore be used every fall and winter whenever possible, no matter what the temperature is. Only shortly before new growth does the brushwood finish its protective task and can be removed.
Overwinter potted plants outside
A mountain savory rooted in a pot remains just as hardy as outdoor specimens. However, it is more exposed to the cold inside. Because the frost freezes through the soil in the pot more easily because it can work from all sides.

Savory in winter quarters
Even if a pot of mountain savory is allowed to overwinter outside. A suitable winter quarters is a preferable alternative. It should be light and cool. A conservatory or a bright stairwell are well suited for this.

If you propagate savory yourself from cuttings, you should definitely overwinter the young plants indoors in the first year.
