You can serve the salad the classic way with a dressing and bacon or walnuts. Lamb's lettuce is also very good in combination with potatoes, in a smoothie or as a soup.

Lamb's lettuce can be prepared in many different ways

Creamy soup with lamb's lettuce

Ingredients for 4 servings

  • 2 shallots
  • 2 cloves of garlic
  • 200 g cleaned lamb's lettuce
  • 150 g potato, cut into small cubes
  • 60 g bacon cubes
  • 100 ml cream
  • 1 tbsp butter
  • 600ml of water
  • 1 cube vegetable broth
  • About ½ teaspoon salt, to taste
  • 2 pinches of pepper
  • 1 pinch of sugar
  • some lemon juice
  • 1 dash of Worcestershire sauce

preparation

  • Dice shallots
  • Finely chop the garlic
  • Put the butter in a saucepan, let it melt, sauté the onions and garlic.
  • Deglaze with water.
  • Dissolve the bouillon cube in it.
  • Add the potato cubes and simmer gently for about 10 minutes.
  • In the meantime, fry the bacon in a pan until crisp.
  • Add lamb's lettuce to the soup and cook for two to three minutes.
  • Puree with a hand blender and season with the spices.
  • Pour the soup into cups, sprinkle over the diced bacon as a topping.

Lamb's lettuce with potato dressing

Ingredients for 2 servings

  • 200 g lamb's lettuce
  • 4 firm tomatoes

For the dressing:

  • 100 grams of potatoes
  • 200 ml vegetable broth
  • 2 spring onions
  • 1 level tsp mustard
  • 1-2 tbsp vinegar
  • salt and pepper to taste

preparation

  • Wash the potatoes, peel, cut into cubes and cook in the vegetable stock until soft.
  • Wash lettuce and tomatoes. Cut tomatoes into bite-sized pieces.
  • Wash spring onions and cut into fine rings.
  • Place the cooked, slightly cooled potatoes in a tall container with about 2/3 of the cooking liquid.
  • Add spices and mix with blender.
  • Mix the dressing and onions with the lamb's lettuce.

If you're a fan of potato salad, you can give the dish an interesting twist with fresh lamb's lettuce. Just fold in the salad just before serving, so it stays nice and crunchy.
