Currants are very healthy. They contain a lot of vitamin C and minerals and are real slimmers because they consist mostly of water. Because of the high water content, currants must be consumed as soon as possible.

Keep currants for no more than two days
Currants are best eaten immediately after harvest. If it happens that you can't use fresh currants until the next day, you have to store them in a cool place.
How to prepare currants for short-term storage:
- Do not wash
- Store in the fridge with pods
- Sugar the cleaned berries and put them in the fridge
Washed fruits rot faster
Currants that you cannot eat immediately should not be washed or removed from the panicles.
Only pick out any rotten or moldy berries.
Place the stalks next to each other on a plate and cover with cling film. The berries stay fresh for a day in the refrigerator.
Sugar currants
Sugar is a natural preservative. It prevents mold growth. If cooled well, sugared fruits can be kept for up to two days.
Sort the fruits carefully, wash them and dry them with some kitchen paper. Only then do you remove the berries from the panicles.
Place each berry in a bowl and mix with sugar. Cover the bowl with cling film and place in the refrigerator.
Take out of the fridge in time
The red currants lose their aroma when they are cooled. Remove the pods or sugared berries from the fridge 2-3 hours before serving to allow them to reach room temperature and taste better.
Don't harvest too many berries at once
Chilled fruits no longer taste as good as freshly picked currants from the bush. You should therefore only harvest as many berries as you can consume or preserve on the same day.

Currants keep longer if you freeze them. Frozen or canned berries will keep for up to a year and can then be made into compotes or juiced. However, they lose some of their valuable ingredients through storage.
