Tomato juice is well known and popular, low in calories and very healthy. However, the liquid vegetables are usually bought in the supermarket. Only a few bother to make tomato juice themselves.

The healthy and versatile tomato

Tomatoes have many uses in the kitchen. Whether as a salad, sauce or juice, in vegetables, in casseroles or as a pizza topping, tomatoes bring color to food and also many healthy ingredients.
They contain many trace elements, minerals, vitamins, fruit acids, proteins, carbohydrates and roughage. The large water content makes the tomato a tasty and low-calorie snack.

Juicing tomatoes

Tomato juice can be made quickly and without a lot of work. Especially with a rich harvest, juice can be produced for the whole year. Choose between cold and hot juicing.

This works with a juicer, which slowly and gently juices the fruit using a screw press.

  1. Wash the tomatoes and cut them into small pieces. Remove the green stalk.
  2. Put the tomato pieces into the juicer in batches.
  3. Collect the juice in a suitable container. The machine transports the dry residue into a separate container.
  4. The juice can now be seasoned and drunk.
  5. If you want to preserve the juice, you have to boil it once and fill it into sterile bottles while it is still hot.

Juicing in the saucepan

To make a quart of tomato juice, you need about three pounds of tomatoes.

  1. Wash the tomatoes and cut them into small pieces. Remove the stalk.
  2. Place the tomato chunks in a large saucepan.
  3. Cook the tomatoes, stirring constantly, for about 40 minutes.
  4. Pass the tomato pulp through a fine cheesecloth and collect the juice in a bowl.
  5. You can now season the juice to taste.

The juice obtained in this way can be drunk or used as a tomato soup or as a sauce base for meat dishes. You can freeze the juice or pour it hot into suitable containers and store it. It will keep for a few months. If you want to make it last longer, the juice can be filled into mason jars and boiled down again for about 40 minutes.
If you would like to make a juice with pulp, use the blender to puree the tomato pulp.
