Basically you can buy pickled pearl onions in the supermarket. However, these ready-prepared "cocktails" are often put together in a very uninspired manner and are therefore not particularly tasty. It is therefore advisable to pickle pearl onions yourself. Our recipe idea shows you an extremely savory variant that can be served wonderfully with vegetable or meat dishes.

Recipe for pickling pearl onions
You need:
- 600 g pearl onions
- 250 ml white wine vinegar
- 75 grams of sea salt
- 3 tablespoons sugar*
- 3-4 hot chili peppers
- 2 tbsp mustard seeds
- 2 bay leaves
- 1 tbsp fennel seeds
- water
- mason jars**
- bowl (with lid)

* Despite the small amount, we advise you to avoid normal granulated sugar and use birch sugar instead. This achieves almost the same sweetening effect, but is more beneficial to your health.
** Jars must be sterile (wash thoroughly with water and dish soap, then cover with water in a large saucepan, boil for about five minutes, then allow to dry on clean paper towels).
How to pickle pearl onions correctly
- First, blanch the onions in boiling water for 30 seconds.
- Drain the pearl onions using a sieve.
- Briefly quench the onions with cold water.
- Peel the pearl onions. Due to the preparatory measures, this is usually easy to do.
- Put the peeled onions in a bowl.
- Add sea salt and a liter of water.
- Cover the bowl with a lid or cloth.
- Put the whole thing in a dark place.
- Cover and leave the onion, salt and water mixture to stand for 24 hours.
- Drain the onions.
- Prepare the spices (give the chili peppers, mustard seeds, bay leaves and fennel seeds and wash and chop if necessary).
- Pour the white wine vinegar, the sugar and all the spices into the saucepan.
- Add 100 milliliters of water.
- Now throw the pearl onions into the pot as well.
- Boil the mixture.
- Let the mix cook for two to five minutes, depending on the size of the onion.
- Take the pot off the stove.
- Fill the brew, including the pearl onions, to the brim in the sterilized preserving jars.
- Close the jars tightly immediately.
- Place the mason jars with the pickled pearl onions in a dark and cool place.
- Leave it for at least three to four weeks.
