Peaches taste incredibly delicious - but unfortunately they don't keep very long after harvesting or buying them in the supermarket. That is why it is helpful to know how to preserve the fruit. Canning is a good option. We'll show you how to pickle your peaches the right way - with simple step-by-step instructions!

Delicious recipe for pickling peaches
You need:
- 8 peaches
- water
- 450 g sugar*
- 1 packet of ground vanilla (5 g)
- sea-salt
- cloves
- Mason jars with closure
- cooking pot
- preserving pot
- small bowl for stirring
- spoon
- kitchen paper
* For health reasons, we recommend that you use birch sugar instead of regular sugar.
How to pickle your peaches correctly
- Always choose ripe and unblemished peaches.
- Wash the fruits carefully and dry them.
- Peel the peaches with a kitchen knife.
- Halve the fruit and remove the stones.
- In a small bowl, mix 50 grams of sugar and the ground vanilla.
- Bring the water in the pot to a boil.
- Add a pinch of sea salt, the pure sugar (400 grams) and the sugar-vanilla mixture to the water.
- Take the pot off the stove.
- Wait until the sugar has completely dissolved in the water.
- Divide the peach halves evenly among the mason jars.
- Add a clove of spices to each.
- Pour the hot liquid into the glasses so that the peaches are completely covered.
- Wipe the rims of the mason jars with a clean kitchen towel.
- Close the jars tightly immediately.
- Place the jars in the saucepan.
- Then fill the pot with enough water so that the water is level with the liquid in the jars.
- Let the whole thing cook at around 75 degrees for about 30 minutes.
- Take the stewpot off the stove and take out the jars.
- Turn the jars upside down and leave them for at least two hours.
- Store the cooled fruit in a cool, dark place.

The pickled peaches can now be eaten for several months.
