Mushroom lovers swear by the porcini mushroom as an accompaniment to game dishes. But this special mushroom is usually only available fresh in autumn. A tasty alternative is the king oyster mushroom, which is available in stores all year round and can even be frozen for a reserve.

The mushroom is similar to the porcini mushroom with its thick stalk and brown cap. It is versatile and easy to process, suitable for frying, steaming, grilling or as a raw side dish in a salad. The tasty king oyster mushrooms are low in calories and have a high protein content.
In the supermarket, the delicious mushrooms are in season all year round because they come from cultivated cultivation. Here they are grown on the roots of herbs and hence got their name.
Storage of king oyster mushrooms
You can store king oyster mushrooms in the vegetable drawer of the refrigerator for a while. For this, however, the quality of the mushrooms must be impeccable. A fresh king oyster mushroom is plump and juicy, neither discolored nor dry. Wrap the cleaned mushrooms in a damp kitchen towel and store in the crisper of the refrigerator. Here they stay fresh for about 8 to 10 days.
Anyone who has bought larger portions of king oyster mushrooms can also freeze them. Properly stored, the mushrooms stay in cold sleep for about eight months.
Prepare oyster mushrooms for the freezer
If you want to prepare king oyster mushrooms for freezing, it takes little effort. Since washing is not necessary, only four work steps are required.
- Carefully remove any dirt from the mushrooms with a brush or a dry cloth
- cut off the dry stem ends, as well as discolored parts
- cut the mushrooms into the desired shape, e.g. B. in slices or cubes
- You can now portion the king oyster mushrooms and freeze them in suitable freezer bags or boxes. Don't forget the freezing date!
