Cucumbers are among the most healthy types of vegetables. Even pickled, the cucumbers impress with their intensive aroma and special crunchiness. Not only do they keep much longer, they also go perfectly with a snack, are a great side dish with grilled food and complement cold buffets.

Cucumbers can be pickled in a variety of ways

Pickled cucumbers with milk

Since the vegetables are not heated, all valuable nutrients are retained during fermentation.

Ingredients:

  • 2 snake cucumbers
  • 1 liter of water
  • 40 grams of sea salt

You also need very hot rinsed jars with screw caps. So that the vegetables do not float, you should weigh them down with a boiled stone or a wooden disc.

Preparation:

  • Wash the cucumbers thoroughly, quarter them and cut into strips about ten centimeters long.
  • Layer tightly in the glasses.
  • Dissolve the salt in the water and pour the broth over the cucumbers. Leave a 2cm border at the top.
  • To prevent the vegetables from floating, put something on top and close the jar.
  • Leave at room temperature. After a few days, small bubbles will rise in the pickle jar and the brine will become milky and cloudy.
  • Then put the jar in the fridge and let the cucumbers continue to ferment for at least two weeks.

Sweet and sour pickled cucumbers

Ingredients for 4 glasses:

  • 2 snake cucumbers
  • 300 ml white wine vinegar
  • 300ml of water
  • 2 onions
  • 6 tbsp sugar
  • 2 tsp salt
  • 1 tsp peppercorns

Optional to taste: mustard seeds, chili peppers, bay leaves, allspice, juniper berries, garlic

preparation

  • First sterilize the jars in boiling water for ten minutes.
  • Wash cucumbers and cut into bite-sized pieces.
  • Peel the onion and cut into rings.
  • Boil water and vinegar. Add the sugar, salt and spices and leave to stand for a few minutes.
  • Meanwhile, layer the cucumbers tightly in the prepared containers.
  • Top up with the boiling liquid. The vegetables should be completely covered, leaving a 2cm border at the top.
  • Immediately screw tight and turn upside down.
  • After cooling, store in a cool, dark place.

To extend the shelf life, you can also boil the cucumbers.
