Rose hips are a superfood from the local nature. Because of their health-promoting ingredients, the rose fruits are popular in the kitchen. Correct processing is important so that the valuable properties can develop fully.

Rose hips contain some substances that have a positive effect on health. In the therapy of osteoarthritis they are valued because of the galactolipids they contain. Polyphenols, fatty acids and vitamin C complete the nutrient cocktail. The powder of fruits and seeds has an anti-inflammatory, analgesic and antioxidant effect. Since both vitamins and the galactolipid are heat-sensitive, you must process the harvest raw at a maximum of 40 degrees Celsius.
Which rose hips are suitable?
Garden roses were bred for traits such as willingness to bloom or flower colour. Even though many of these trees develop rosehip fruits, they stand behind the wild roses when it comes to health-promoting properties. Their fruits are smaller, which makes them not worth harvesting. Gather in nature instead. The native dog rose (Rosa canina) grows in bushes, on the edges of forests, paths or roads.

Collect the dummy fruit when they are ripe. The fruit ripens late and extends from October to November. Rarely can you collect mature rose hips as early as September. The degree of ripeness cannot be determined by the colour, but by gently pressing it. Even immature specimens shine in bright red tones. They are ready to harvest when the fruit is soft.
drying and grinding
400 grams of rose fruits yield about 300 grams of pulp and 100 grams of seeds. You don't necessarily have to extract them from the meat. Remove the remains of the flowers from the fruit and cut them in half. Spread out the yield on a wire rack and dry it at 40 degrees in the oven or in the raw food dryer. Then grind the dried rosehip pieces into powder.
