Which cucumbers are suitable for preserving?

Gherkins, the classic "gherkins", do not have to be cut up and are placed in the jar whole. Due to the firm shell, which is not smooth in contrast to that of cucumbers, they remain nice and crunchy after sterilization.

But cucumbers can also be boiled down well if cut into pieces.

The necessary utensils

Pickles can be canned in a large pot or in the oven. You also need disposable or twist-off jars that have to be sterilized in advance.

  1. Place jars, lids and rubber rings in boiling water for about ten minutes.
  2. Alternatively, you can sterilize the jars in a 140 degree oven for ten minutes.

Cooked gherkins

ingredients

  • 1 kg pickled cucumbers
  • 1 large onion
  • 500 ml vinegar
  • 400ml of water
  • 75-100g of sugar
  • 10 grams of salt
  • 10 peppercorns
  • 2 allspice corns
  • 2 bay leaves
  • 2 tsp mustard seeds
  • 1 tsp dill

preparation

  1. Wash the cucumbers thoroughly, cut off the stalks.
  2. Layer tightly in mason jars.
  3. Divide the onions and spices between the glasses.
  4. Put all the ingredients for the broth in a saucepan and bring to the boil.
  5. Pour the broth over the vegetables. The cucumbers must be completely covered by the liquid. A border of at least three centimeters wide remains at the top.
  6. Close the jars and place them on the griddle of the preserving pot.
  7. Fill the pot with water according to the manufacturer's instructions and boil down at 85 degrees for 30 minutes.

Boiled pickles

ingredients

  • 5 kg peeling cucumbers or fully ripe cucumbers
  • 10 grams of salt

South:

  • 200ml of water
  • 200 ml vinegar
  • 50 grams of sugar
  • 10 grams of salt
  • 20 g mustard seeds

preparation

  1. Peel the cucumbers, quarter them and remove the seeds with a spoon.
  2. Cut into bite-sized pieces, sprinkle with the salt and let stand for two hours.
  3. Layer the cucumber pieces in the glasses.
  4. Put all the ingredients for the broth in a saucepan and bring to the boil.
  5. Pour the broth over the cucumbers. Make sure that a 3 cm high edge remains.
  6. Seal jars and place in alarm pot.
  7. Fill the pot with water according to the manufacturer's instructions and preserve the gherkins at 85 degrees for 30 minutes.

tips

If you don't have a wake-up pot, you can also cook gherkins in the oven. Place the jars in a roasting pan and slide them onto the lowest shelf of the cold oven. Heat this up to 180 degrees. Switch off as soon as bubbles appear and leave the glasses in the hot tube for another half hour.
