How do you prepare mangoes for freezing?
There are two recommended ways to freeze mangoes. Either cut the peeled and pitted mango into bite-sized pieces or puree the flesh and freeze the puree. Only use intensely fragrant, really ripe mangoes for freezing.
So that you can thaw the pieces individually or in portions, they must not touch each other when freezing, otherwise they will freeze together. You can prevent this by freezing the mango pieces loosely distributed on a baking sheet and only placing them in a freezer bag when they are frozen. Or you can use a large flat freezer container for this.
Be careful not to freeze the mango chunks or the puree for too long. The longer it's frozen, the more it loses flavor. In addition, the valuable vitamins are lost. After a while you should only use it in hot dishes.
How do you use frozen mangoes?
After defrosting, you can use the frozen mango puree as you would use the fresh puree. The shorter the freezing time, the more suitable it is for raw processing. However, mango pieces will soften a bit when defrosting. Not everyone likes this in a fruit salad.
If you also want to defrost smaller amounts of puree, then freeze it in ice cube trays. Once frozen, you can transfer the cubes to freezer bags or cups. Don't forget to label them. Mango puree that is too old loses its taste. Of course, this also applies to frozen mango pieces. After about three months it should be used up.
