If you have fresh capers on hand, you can pickle them yourself

Easy Caper Pickling Recipe (Instructions Included)

You need:

  • capers
  • white wine vinegar
  • water
  • bay leaves
  • mason jars
  • cooking pot

How to proceed:

  1. Wash your capers carefully (see first steps of the second guide).
  2. Mix equal parts water and white vinegar in a saucepan.
  3. Boil the mixture briefly.
  4. Remove the broth from the stove.
  5. Place the capers in sterilized mason jars.
  6. Pour the broth over it.
  7. Put a bay leaf in each glass.
  8. Close the jars tightly.
  9. Leave in a cool place for at least ten days.

More comprehensive recipe for pickling capers

You need:

  • 250 grams of capers
  • 150 ml vinegar
  • 2 peppercorns
  • 4 tbsp olive oil
  • water
  • sea-salt
  • Mason jars with lids
  • small bowl
  • cooking pot

How to pickle capers correctly

  1. Put the capers in fresh water and wash them thoroughly.
  2. Pour off the water.
  3. Then soak the capers in fresh water and rinse well.
  4. Repeat the procedure a third time.
  5. In a bowl, mix fresh water with a tablespoon of sea salt.
  6. Place the capers in the salt water.
  7. Wait about ten minutes.
  8. Pour off the water.
  9. Place the capers on a kitchen towel to dry.
  10. In the meantime, put 150 milliliters of water in a small saucepan with the vinegar, a teaspoon of salt and the peppercorns.
  11. Boil the mixture very briefly.
  12. Remove the broth from the stove.
  13. Place the capers in clean and sterilized jars.
  14. Pour the stock over the capers.
  15. Carefully pour the olive oil over the capers until the capers are completely covered (ultimately the liquid must be at least half a centimeter above the capers).
  16. Seal the jars airtight.
  17. Leave it in a cool place for at least ten days.

tips

The pickled capers will keep for several months in the fridge.

Important: Only use sterilized glasses to ensure that there are no germs in the containers.
