Figs can be preserved for many months by pickling. The fruits taste particularly good when preserved in red wine, port wine or rum. Our recipe and instructions tell you how to pickle your dried figs correctly.

Recipe for pickling figs
you need
- 500 g dried figs
- 600 ml port wine
- 500 ml freshly squeezed lemon juice
- 100 g sugar*
- 1 vanilla bean
- large mason jar (capacity 1.5 l)
* We recommend that you use birch sugar instead of regular sugar because the latter is better for your health.

The recipe is just one of many potential options for pickling figs. Be creative, let your imagination run wild - as long as the ingredients harmonize and you work with a preservative base (high-proof alcohol is best).
How to pickle figs correctly
Important preliminary remark: Make sure that the mason jar is absolutely clean - it is best to wash it with boiling hot water to sterilize it.
- Take the vanilla bean and cut it lengthwise with a sharp kitchen knife, then carefully open it.
- Use a teaspoon to gently scrape out the pulp from the pod.
- In a clean container (not already in the jar), mix the vanilla pulp with the port and lemon juice.
- If necessary, remove the stalks from the figs, ideally with scissors.
- Place the figs in the jar along with the sugar.
- Then pour the mixture of port wine, lemon juice and vanilla seeds over the sugared fruit. The figs must be completely covered - the liquid should even protrude an inch or two above them.
- Immediately close the mason jar tightly.
- Leave it for at least two weeks.

Your pickled figs can be stored in the refrigerator for about three to four months. Make sure that the fruit is always covered with liquid - otherwise keep adding some port wine.
