Juicy pears hang heavily from the branches of the fruit trees in autumn. In order to be able to enjoy the sweet fruit all year round, it is worth pickling pears. The preserved fruits are particularly suitable for winter desserts.

You can keep your harvest for over a year with this simple, basic pickled pears recipe. If you want different flavors, you can vary the recipe to taste with different spices, wine or juice. See the next section for some suggestions.
- Choose pears that are not too soft and don't have brown spots.
- Peel the fruit, remove the core and cut the pears into wedges or cubes.
- Take sufficiently large boiled glasses and fill them with the pear pieces.
- Put plenty of water in a saucepan, bring to the boil and dissolve a few tablespoons of sugar in it.
- Fill the glasses filled with pears to the top with the cooled sugar water.
- Boil the carefully closed jars at 90 °C for 30 minutes. You can do this either in a large saucepan filled with a little water or in the oven by placing the jars in the dripping pan filled with water.
Pears in red wine and other specialties
Red wine, cinnamon, cloves and other aromatics give the pickled pears a unique taste that makes them the highlight of a winter dessert or a tasty accompaniment to a Christmas roast.
Some tasty variants for the recipe described above can be found in the following list:
- some aromatics that pair well with pears: cinnamon, vanilla, cloves, cardamom, aniseed, chili, rum, brown sugar
- Red wine pears: Use a good red wine instead of water. Add seasonings of your own taste. Cinnamon and cloves are particularly suitable.
- Pears in White Wine and Apple Juice: Replace the water in the basic recipe with white wine and apple juice in a 1:2 ratio. Here, too, you can go all out with the aromatics: cinnamon, vanilla, cloves and a good dash of rum refine the preserved pears.
- Use caramelized sugar: Instead of dissolving the sugar in the liquid of your choice, you can let it caramelize and deglaze for an extra subtle flavor. Place the white or brown sugar in a saucepan, melt while stirring constantly, and deglaze with water, wine, or juice while it is still light brown.
