What harms the nuts?
Nuts are a product of nature and are therefore inevitably subject to change. But how long they actually last depends on a number of factors.
- Light and heat accelerate the degradation process
- humid environment makes them mouldy
- the higher the oil content, the faster they go rancid
Store unshelled nuts
Unshelled nuts should be left in the shell for as long as possible because it is their natural protection. Until consumption, a dark and dry place is optimal for their storage.
Whole nuts are stored in airy nets. Your comfort level is between 10 and 18 degrees Celsius. Then they last for several months without suffering any loss of quality.
Shelled nuts are more delicate
If the nuts are robbed of their shell, it makes them more sensitive to all external influences. This sensitivity increases when the nuts are crushed. Because of the high perishability, chopped and ground nuts should therefore be used up as soon as possible.
Store opened bags in the refrigerator
Peeled and chopped nuts can be stored well in the refrigerator. So that they do not take on the taste of cheese, sausage and the like, they may only be placed in the refrigerator in airtight packaging.
You should be able to bake a delicious nut cake after four to six weeks at the latest. Nuts don't last much longer in the fridge.
Nuts keep better in the freezer
Nuts do better in a frostier environment than in the fridge. In an airtight container, peeled and chopped nuts can keep their flavor for a whole year in the freezer.
Rancid and moldy nuts, what to do?
Spoiled nuts are not only inedible, but also harmful to your health. Discard any nuts that exhibit the following characteristics:
- they smell musty or rancid
- there is mold on the kernels or shells
- discoloration appears
- Nuts have dried up
