Every year sometime in May, the asparagus season begins for the asparagus grown in this country. This tastes better to connoisseurs than the well-travelled imported goods. But by June 24th, St. John's Day, at the latest, the season is already over. These few weeks are the right time to fill the freezer with the vegetables.

Peel beforehand whenever possible

There is some evidence that the skin of the spears should be peeled before freezing:

  • the asparagus is eaten without the peel
  • the deep-frozen sticks are immediately ready for use
  • thawed asparagus is soft, making it difficult to peel
  • later peeling is no longer necessary and saves time when cooking

Freeze asparagus unpeeled

Every single rod wants to be freed from its shell. This can take a lot of time. When time is short, the question arises: Postpone freezing by a few days or freeze the asparagus unpeeled?

The fresher the asparagus is frozen, the better its quality after thawing. Therefore, you should not wait long before freezing. The stalks can also be peeled before cooking if necessary.

After washing, the dried sticks are simply packed in freezer bags. The trapped air should be squeezed out and the bag sealed tightly.

Thawed asparagus spears lose their firmness. They are soft in the hand and peeling becomes impossible. That's why they have to be peeled before they thaw completely. Here's how it works best:

  1. Prepare a bowl of warm water. The bowl should be large enough to hold individual spears of asparagus.
  2. Take the frozen asparagus spears out of the freezer.
  3. Dip a stick in the warm water for about 3 seconds. This will thaw the thin shell.
  4. Now use a paring knife to peel off the skin. Be careful when doing this, as the frozen sticks are easily broken.
  5. Then continue with the next stalk until you have peeled the entire quantity of asparagus.

The shelf life of deep-frozen asparagus is 6 to 8 months if it is continuously refrigerated at minus 18 degrees Celsius.

It is enough if only the outer shell is thawed so that the asparagus can be peeled. In addition, the asparagus should not be thawed any further, but processed further immediately.
