With its open surface, a cut lemon offers an ideal breeding ground for germs of all kinds. It should therefore be used up within a day. If this is not possible, squeeze the whole lemon straight away.
How to completely squeeze a lemon
Lemon juice can be squeezed out with a special lemon squeezer. A juicer can also help. If you don't have either, you don't have to waste a drop.
- First wash the lemon under lukewarm water.
- Place the lemon on a firm surface. Place your hand on it and roll it back and forth while applying firm pressure with your hand.
- Then cut the lemon in half and squeeze it.
- You can also pierce the inside with a fork and turn the lemon half back and forth while doing so. This way more juice can be squeezed out.

If you freeze the juice of an organic lemon, you should first finely grate the yellow peel on a kitchen grater. It flavors many baking recipes and also freezes well.
Sieve out all the seeds
Before freezing, pass the freshly squeezed lemon juice through a fine kitchen sieve, which catches all the pips. These are disposed of, because lemon seeds are not eaten and are rather annoying. Lemon juice is usually used later in the frozen state and it is then no longer possible to remove the pits.

Of course, you can put all the lemon juice in one freezer box and freeze it, but that's not practical. Only rarely is the entire amount of lemon juice needed at once. Many mini containers would be a solution, but there is another way: with an ice cube container.
