Kohlrabi is not frozen as a whole tuber, as this is impractical for further use. A frozen kohlrabi cannot be cut with a kitchen knife. On the other hand, it takes a long time for such a large piece to thaw again. Therefore, when freezing kohlrabi:

  • wash and peel beforehand
  • remove woody spots
  • cut into cubes or strips
  • Slices are suitable for breading after defrosting

Blanching - step by step

  1. In a large pot, bring salted water to a boil.
  2. Meanwhile, have a large bowl of cold water ready with a few more ice cubes.
  3. Add the kohlrabi pieces to the water as soon as it boils.
  4. After about two minutes of cooking, remove the pieces with a slotted spoon and drop them into the ice water to chill.
  5. Remove the kohlrabi pieces from the ice water after they have cooled. Kohlrabi that stays in the water longer than necessary loses more vitamins.
  6. After draining in a sieve, the kohlrabi is promptly portioned, packaged and frozen.

tips

If you blanch large quantities of kohlrabi one after the other, the hot pieces will heat up the ice water. Change the water if necessary or add new ice cubes.

Freeze raw kohlrabi

Contrary to popular recommendations, some kohlrabi connoisseurs freeze raw kohlrabi. The tuber is only peeled and cut. According to them, the taste should not suffer. You are welcome to try whether you like such a frozen kohlrabi. If so, you can save a lot of time freezing this tuber in the future.

Since the kohlrabi has already been peeled and cut, it can be processed further within 12 months without any further action.

Frozen diced kohlrabi can be used in hot dishes. However, since their remaining cooking time is very short, the pieces should only be added towards the end of the cooking time. Otherwise they will be too soft or mushy.

Defrosted kohlrabi can be eaten without further processing, but the original firmness to the bite is no longer available. In terms of taste, it can't keep up with a fresh kohlrabi.
