A homemade risotto tastes hearty, delicious and really fills you up. So if there's leftovers in the saucepan and you don't want to eat risotto again the next day, you can freeze it quickly and easily.

When can risotto be frozen?

If you want to freeze the leftovers of your risotto, it should be as freshly cooked as possible and not yet on the used plate. The fresher the risotto is frozen, the better it tastes when thawed.
After only two hours at room temperature, harmful microorganisms can spread in the risotto and make it inedible. So put the leftovers of the meal in a freezer container as soon as possible, close it and let the risotto cool down completely before freezing. Only freeze the leftovers from the cooking pot, as food leftovers from the plate have already come into contact with your spoon and therefore your saliva, which also encourages germs to multiply.

Pack the risotto so that it is suitable for freezing and freeze it

Lockable freezer containers made of plastic or stainless steel are very well suited for freezing risotto. It is best to pack the leftovers in several individual portions so that you can only defrost the amount you need at a time. Don't forget to label the containers with the freezing date so you don't lose track of what's in your freezer and food spoils.
By the way, you can also freeze your mushroom risotto without hesitation and enjoy it defrosted: there is a persistent rumor that mushrooms should not be frozen.

Defrost the risotto

To defrost the frozen risotto again, you can choose between two variants:

  • Defrost your risotto slowly and gently in the fridge, because that way it won't get soggy. Put it in the fridge in the unopened freezer the night before. This keeps it cool and no germs can develop on it. Before eating, you can heat the risotto in a saucepan or in the microwave.
  • Defrost the risotto directly in the microwave and heat it up at the same time. Put a few drops of water over the risotto and place it in the microwave, then set it to defrost. After a few minutes, stir the dish so it heats up evenly and microwave again for a few minutes.

The risotto can be kept for three months at -18 °C in the *** freezer compartment. The longer it is stored, the less aromatic it tastes after thawing.
