In summer, zucchini sometimes produces fruit much faster than garden owners would like. However, that is no reason to give away the delicious legs, because they can also be used wonderfully in sweet dishes.

Zucchini chocolate cake
This cake is wonderfully moist and tastes wonderfully chocolatey at the same time. For the right amount of crunch, we enrich the dough with walnuts.
Ingredients for a loaf pan
- 350 g finely grated courgettes
- 240 grams of flour
- 120 grams of sugar
- 120 ml sunflower oil
- 3 eggs
- 50 g baking cocoa
- 50 g grated dark chocolate
- 30 g roughly chopped walnuts
- 1 teaspoon Baking powder
- 1 pinch of salt
preparation
- Pre heat the oven to 180 degrees celcius.
- Beat the eggs with the sugar until fluffy.
- stir in the oil.
- Mix flour, cocoa, baking powder and salt.
- Mix the zucchini with a third of the flour mixture.
- Add the rest of the flour with the grated chocolate and the roughly broken nuts to the egg and oil mixture and fold in.
- Fold the zucchini into the batter.
- Pour everything into the previously greased loaf pan.
- Bake for about 50 minutes.
- Let the cake cool for ten minutes, turn out of the mold and let cool completely.
- Decorate with powdered sugar or chocolate icing if desired.
Zucchini ginger jam

ingredients
- 800 g peeled, finely grated courgettes
- 1 thumb-sized piece of ginger
- 1 kg preserving sugar 1:1
- 1-2 squirts of lemon juice
preparation
- Peel the ginger and chop into very fine pieces.
- Place all ingredients in a large saucepan and mix.
- Cover and leave for an hour.
- During this time, sterilize the jars and lids in boiling water for ten minutes.
- Bring the zucchini-ginger mixture to the boil and let it simmer for about three minutes while stirring.
- do a gel test. If the jam has set, pour it directly into the jam jars. Otherwise, continue cooking for a minute.
- Close the jars hot and let them cool upside down.
