Silver onions are 15 to 30 centimeters large onions that are rarely offered fresh. It is all the better to make the precious vegetables last longer - for example by pickling them. We'll show you how it's done!

Recipe for pickling silver onions
You need:
- 400 g silver onions
- 400 ml white wine vinegar
- 30 grams of sea salt
- 2 tbsp honey
- 2 tbsp mustard seeds
- 2 bay leaves
- 10 black peppercorns
- 4 cloves
- 4 allspice corns
- canning aid
- water
- 2 mason jars
- bowls
- cooking pot
Tips:
- Silver onions have a thin outer skin and are therefore very sensitive. When buying, you should make sure that you only take spotless onions - i.e. those without bruises or dark spots.
- In order to reliably protect the pickled silver onions from mold and fermentation, it makes sense to use preserving aids. This also extends the shelf life.
- The preserving jars must be absolutely germ-free - i.e. sterile. To ensure this, proceed as follows:
- Wash glasses thoroughly with water and detergent.
- Place in a large pot.
- Fill the pot with plenty of water (cover the glasses completely).
- Bring to the boil and cook for five minutes.
- Allow jars to dry on clean kitchen paper.
- Carefully peel off the silver onions.
- Place the peeled onions in a bowl.
- Pour sea salt and 500 milliliters of water into the bowl. Make sure your silver onions are completely covered with the brine.
- Cover the bowl with a lid or cloth.
- Leave in a dark, dry place for 24 hours.
- Drain the onions using a sieve.
- Prepare all the spices (the mustard seeds, bay leaves, peppercorns, cloves and allspice corns) and mix them together in a bowl.
- Alternately layer pickled onions and spices in sterile mason jars.
- Pour 200 milliliters of water, the white wine vinegar, the honey and the preserving aid into the saucepan.
- Boil the mix.
- Let the broth boil for five minutes.
- Pour the liquid over the silver onions and spices in the mason jars, filling to the brim.
- Close the jars tightly immediately.
- Place the mason jars with the pickled silver onions in a cool and dark place.
- Let the mixture steep for at least three to four weeks.
