Greengage are yellow, green or reddish fruits that are about the size of a plum. Named after Queen Reine Claude, the fruit captivates with its sweet, spicy aroma. Ripe noble plums exude a pleasant scent and give way slightly when pressed lightly. Unfortunately greengages only last a few days at room temperature. However, they can be frozen well and preserved in this way.

Greengage can be frozen for a long time

Only freeze plums that are in perfect condition and have a firm, intact skin. Greengage that are already very soft or even have rotten spots are no longer suitable for freezing.

  1. Wash the greengage thoroughly.
  2. Dry the fruit.
  3. Halve the fruit and remove the stone with a knife.

Freeze Greengage

Simply put the stone fruits in a freezer bag, freeze them together into a large lump and it is almost impossible to remove the desired quantity. Therefore, it makes sense to first pre-freeze the fruit individually.

  1. Lay the greengages side by side on a tray. They shouldn't touch.
  2. Place the stone fruit in the freezer for three hours.
  3. Fill the noble plums into a suitable container and freeze the greengages again.

The fruit will keep for six to nine months in the freezer.

How are the frozen greengage thawed?

You can thaw frozen fruit in the refrigerator overnight. It's faster at room temperature. 300 g Greengage need about five hours to completely thaw.

During this process, the fruit loses liquid. Therefore, place the greengage in a bowl in which the tasty juice can collect. You can eat the thawed stone fruit directly or use it like fresh fruit.

If you want it to be particularly quick, you can defrost the frozen fruit in a water bath. Fill the greengage in a bowl and place it in a larger vessel with very warm water. Turn and stir occasionally to speed up the defrosting process.

Greengages are often confused with mirabelle plums. Mirabelle plums, however, contain a little less acid, which is why they taste sweeter than plums. In greengage, the stone is also more difficult to separate from the pulp than in mirabelle plums.
