Sweet chestnuts roasted over the fire are a delicacy that no visit to the Christmas market should be without. Chestnuts also go well with many savory or sweet wintry dishes. By preserving the fruit, which only stays fresh for a limited time, you can store it for a whole year.

Pickled chestnuts are a delicious snack

Utensils needed

The most important thing when preserving are the jars, which have to be sterilized in boiling water for 10 minutes beforehand. Can be used:

  • twist-off jars with seal intact,
  • Preserving jars with glass lid, rubber ring and metal clip,
  • Jars in which the lid is connected directly to the jar with a rubber ring with a metal bracket. However, these have the disadvantage that you cannot check whether a vacuum has actually formed.

You can boil chestnuts in the classic way in a wake-up pot or in the oven.

Prepare chestnuts

  1. Wash the sweet chestnuts thoroughly with the peel.
  2. Using chestnut tongs or a sharp knife, cut a cross in the curved side.
  3. Make sure that the hairy membrane is also scratched, otherwise it will not detach from the pulp later.
  4. Fill a pot with water and boil the chestnuts for 6 minutes.
  5. Meanwhile, preheat the oven to 220 degrees and place the wet chestnuts on a baking sheet.
  6. Bake at 220 degrees for 30 minutes.
  7. Shake occasionally and sprinkle with water.
  8. Let cool and peel.

Sweet boiled chestnuts

Ingredients:

  • 1 kg chestnuts
  • 125 ml water
  • 2 lemons
  • 750 grams of sugar

Preparation:

  1. Squeeze the lemons and add the juice to the water.
  2. Bring to the boil and briefly blanch the chestnuts.
  3. Remove the chestnuts with a slotted spoon and pour the sugar into the water.
  4. Bring to the boil, stirring, until all the crystals have dissolved.
  5. Fill the glasses with chestnuts and top up with the syrup.
  6. Place on the grid of the preserving pot and cook for 30 minutes at 100 degrees.

Neutral boiled chestnuts

Put the prepared chestnuts in glasses and add two tablespoons of water. Seal tightly and steep at high temperature for 1.5 hours.

tips

To check the freshness of the sweet chestnuts, place them in lukewarm water. If the fruit sinks to the bottom, it is of good quality and free of worms. However, if it rises, you should stop using the chestnut.
