Zucchinis belong to the pumpkin family and usually bring a good harvest in summer. Numerous fruits ripen in a short time and want to be processed. Sweet and sour pickled courgettes from the garden can also be eaten in winter as a tasty side dish.

This is how you can cook properly

There are several ways to process zucchinis. For example, they can be frozen as a puree or ready-made dish. A great alternative that keeps the zucchini pieces firm is to soak them in a sweet and sour vinegar broth.
For about five pounds of fresh zucchini, you'll also need a pound of onions, if you like green, red, and yellow peppers, ¾ cup vinegar, spices (mustard greens, turmeric, celery leaves, dill, coriander, allspice, fennel seeds, juniper berries, and cloves), and of course salt and a little sugar.

  1. First, sterilize your mason jars. Boil them or put them in the oven at 100 degrees for ten minutes.
  2. Now wash the zucchinis.
  3. Remove the stem and flower ends.
  4. Cut the zucchinis into slices or bite-sized pieces.
  5. Process very thick specimens. you can halve the zucchini and scrape out the core with a spoon.
  6. Peel the onions and cut them into rings.
  7. Put the vinegar, 250 ml water, sugar, salt and all other spices in a large saucepan and bring everything to the boil.
  8. Add the zucchini (if you like, also the prepared peppers) and let them cook for five minutes.
  9. Remove the courgettes (and also the peppers) with the slotted spoon and place them in the jars, alternating with the onion rings.
  10. Pour the hot brew over the vegetables to just below the rim of the glass, making sure that some of the spices get into each glass.
  11. Close the jars and turn them upside down to create a vacuum and preserve the contents.
  12. Allow the jars to cool, then store in a cool, dark place.

If the vegetables are in the jar and everything is closed, you can also preserve the jars in the oven or in the preserving machine.
In the alarm kettle, do not place the glasses too close together and pour water up to half of the glasses. Cook the courgettes for about 30 minutes at 85 degrees. Allow the glasses to cool slightly in the kettle and then place them on the worktop under a cloth to cool completely.

Put in the oven, preheat to 90 degrees. Place the glasses in the dripping pan, pour in 2 cm of water and put the tray in the oven. Cook here for half an hour at 90 degrees. Allow the jars to cool in the slightly open oven for some time. To cool completely, place the glasses under a cloth on the worktop.
