Anyone who grows pumpkins knows that several fruits always ripen on one plant. So it can happen that, for example, ten Hokkaido are ripe at the same time. If they are not going to be stored, the pumpkins can be preserved sweet and sour or savory, regardless of the variety.

Properly cook pumpkin
If you want to preserve a pumpkin, you first have to make sure that the fruit is ripe. A good possibility is the knock test. If the pumpkin sounds hollow, it is ready to be harvested.
In addition to the pumpkin, you need other ingredients such as: water, vinegar, sugar, spices for the sweet version are vanilla, cinnamon, ginger and cloves, spices for the savory version are horseradish slices, bay leaves, pieces of ginger, small onions, dill seeds or mustard seeds.
- First sterilize your mason jars, lids and rubber in boiling water or in the oven for 10 minutes at 100 degrees.
- Now prepare the pumpkin. Except for the Hokkaido, all pumpkins must be peeled. The skin of the Hokkaido becomes very soft when cooked and can be eaten with it.
- Halve the pumpkin and remove the soft inside and the seeds. Dents and rotten spots must also be cut away. You don't have to throw away the pumpkin seeds. Wash the seeds, dry and roast them for a tasty snack between meals.
- Then divide the squash halves into bite-sized pieces and place them in the glasses to about an inch below the rim.
- Now prepare a sweet or savory brew. The sugar should be dissolved, piquant spices should boil once.
- Pour the still hot broth over the fruit. There should be a 1 cm space at the edge, the pumpkins must be covered.
- Dry the edge of the glass again and then close the glasses.
You can now preserve the pumpkin jars in two different ways.
Wake up in the oven
Preheat the oven to 100 degrees. Remove the drip tray and put the glasses in. Fill up with about 2 cm of warm water. Then cook the pumpkin for half an hour at 90 degrees. Allow the jars to cool a little in the oven before removing them and covering them with a towel to cool completely. Canned pumpkins will keep in the jar for about a year.
Preserving in the preserving machine
Place your glasses in the alarm kettle so they don't touch each other. Pour in enough water until the glasses are half in the water. When preserving, observe the boiler manufacturer's instructions. As a rule, pumpkin jars are awakened at 90 degrees for half an hour. After the cooking time, the glasses stay in the machine for a while until they cool down completely under a cloth.
