Apricots are sweet and healthy fruits that come to us primarily from Turkey, but also from Italy and Spain. They are available on the market all year round. Apricot friends can therefore stock up on the goodies and cook them down.

Canning apricots properly
The delicate fruit spoils in a few days, even when refrigerated. If you have a large amount of stone fruit, it makes sense to boil the fruit. This method will keep the fruit for about a year.
canning cooked apricots
- Prepare a syrup for the fruit, dissolve about 500 g of sugar in 1 liter of water and boil down a little.
- Blanch the apricots by placing them in boiling water for about two minutes.
- Remove the fruit and quench them briefly in ice water.
- Now you can skin, halve and stone the apricots.
- Divide the apricot halves into bite-sized pieces.
- Immediately place the pieces of fruit in the simmering syrup. This way the apricots do not discolor and cook gently.
- In the meantime, sterilize the jars. Use jars with screw caps or swing tops.
- Fill the glasses with the apricots and the syrup. Leave about an inch of space at the top.
- Close the jars and place them in a preserving apparatus without the jars touching. The cooking time is based on the manufacturer's instructions, but experience has shown that it is around 20 to 30 minutes.
- Carefully remove the glasses from the kettle and cover them with a kitchen towel to cool.
canning raw apricots
- Again, prepare a syrup for preservation.
- The apricots are washed, halved and stoned.
- Sanitize the jars you intend to use.
- Stack the apricot pieces as tightly as possible in the glasses, but leave a free edge of at least 1 cm at the top.
- Now pour the still warm syrup over the fruit.
- Shake the jar a little so the syrup can spread everywhere. The upper free edge must remain, as the contents will expand as they cook.
- Place the sealed jars in the preserving container. The cooking time depends on the information provided by the appliance manufacturer.
- After the preserving time, the jars cool under a kitchen towel.
