In any case, the harvest is too good to be thrown away. No problem, because sweet potatoes can be stored for several months with a few tips. You even have several variants to choose from.

Various storage options
Depending on capacities and intended use, you have the option of sweet potatoes
- at room temperature
- or in the freezer
to store. It is important that the place is protected from light to prevent it from germinating again. You should also check the vegetables carefully for damage beforehand and only keep undamaged specimens.
Storage at room temperature
- free the freshly harvested sweet potatoes from the soil
- the sweet potatoes do not need to be washed
- keep the sweet potatoes in a place with an air temperature of 24-27°C and a humidity of 90-95% for one to two weeks. Provide enough air circulation with a small fan. At this stage, a protective film is formed over minor damage to the shell
- be careful not to let the sweet potatoes touch each other
- check the sweet potatoes again for bruises and sort out unsuitable tubers
- Now wrap the usable sweet potatoes individually in newspaper
- then place the vegetables in a cardboard box or wooden box
- add an apple. The fruit counteracts a renewed germination process
- a basement is highly recommended for storage. Temperatures of 13-16°C are ideal
Freeze sweet potatoes
- wash the sweet potatoes. Remove stubborn dirt with a vegetable brush
- peel the sweet potatoes
- cook the sweet potatoes for about 20 minutes. Raw tubers lose their aroma and valuable nutrients when they freeze
- Not only do whole sweet potatoes take up a lot of space in the freezer, but they're also difficult to handle once they've been thawed. It is better to either puree the vegetables into mashed potatoes or cut them into slices, depending on your preference
- so that your sweet potatoes do not discolor when the temperature is below zero, then drizzle a little lemon juice on top. Do this sparingly so as not to affect the taste
- before you freeze the sweet potatoes, they must be completely cool
- put the vegetables in an airtight container, such as a plastic bag
- your sweet potatoes preserved in this way will keep in the freezer for about a year
