If you want to store your harvested or purchased cauliflower for several weeks or even months, sour pickling is a good option. With our recipe you will succeed in creating a delicious delicacy!

Cauliflower is usually pickled in white wine vinegar

Recipe for pickling cauliflower

You need:

  • 1 kg of cauliflower
  • 250ml of water
  • 500 ml white wine vinegar
  • 250 g sugar*
  • 2-3 cloves of garlic
  • 1 tbsp salt
  • ½ tsp black peppercorns
  • ½ tsp turmeric
  • ½ tsp chilli flakes
  • 1 tsp mustard seeds
  • ½ tsp celery seed
  • several mason jars**

* Use birch sugar instead of normal granulated sugar - for a similarly strong sweetening effect and health benefits.

** The mason jars must be sterile. To do this, first wash them thoroughly with water and washing-up liquid. Then boil the jars in a large pot filled with plenty of water for about five minutes. Finally, let them dry on kitchen towels.

How to pickle cauliflower

  1. Cut the cauliflower into florets with a sharp kitchen knife. Be sure to remove any brown or otherwise damaged areas.
  2. Rinse the florets in a colander under running (cool) water.
  3. Swirl the strainer vigorously to remove excess water.
  4. Allow the florets to drain a bit before processing them further.
  5. In a medium skillet, toast the mustard greens and celery seeds until lightly browned.
  6. Peel the garlic cloves with a peeler or sharp knife.
  7. Chop the garlic cloves with a sharp kitchen knife.
  8. Add the white wine vinegar (to the pan), along with all the spices (sugar, garlic, salt, peppercorns, turmeric, and chili flakes) and the water.
  9. Heat the broth until it boils.
  10. Reduce heat to medium (simmer).
  11. Pack the cauliflower florets tightly into the sterilized mason jars.
  12. Pour the hot liquid over the florets. These must be completely covered with the liquid. However, leave about an inch of clearance around the rim (so the glass doesn't shatter as the brew expands and contracts).
  13. Close the jars tightly.
  14. Let the jars cool on a safe surface.
  15. Then place the jars in the fridge. There, the full aroma unfolds within two to three days. Even after that, you should store the pickled cabbage in the refrigerator.
