During the plum season in autumn, not only the "Zwetschgendatschi" is in season, but also the Rumtopf or the Pickled Prunes. For these special delicacies, the plums have to be marinated for a longer period of time.

Plums pickled in vinegar
You can pickle plums in vinegar and wine as an accompaniment to game dishes, for a cold buffet or as a treat on vanilla ice cream. For a quantity of 2 kg of plums, proceed according to the following recipe:
- Boil 250 ml red wine, 375 ml red wine vinegar and 1 kg sugar until the sugar has dissolved. Let the brew cool down.
- Prick the plums several times with a toothpick and place them in an earthenware pot.
- Pour the cooled wine-vinegar stock over it and refrigerate the pot for two days.
- After the two days, boil the stock again and let the plums soak in it until their skin tears open.
- Return the plums to the earthenware pot.
- Now you can add spices like a cinnamon stick and some cloves to the broth.
- Boil the brew until it is syrupy and pour it cold over the plums.
- Cover the pot with foil and let the contents mature in a cool place.
Soak plums in rum
Besides strawberries, raspberries and peaches, plums belong in every rum pot. The fruits are layered on top of each other according to their ripening time and repeatedly covered with high-proof rum. The fruit should be bathed in alcohol at least until Christmas, when the first tasting can take place.
However, you can also pickle plums in alcohol without any other fruit. Use washed, flawless fruit and a relatively high-proof rum (at least 50%) or Armagnac. An earthenware or glass pot is suitable as a container for the tipsy fruit.
Plum Rum Pot Recipe
Ingredients:
4 kg of plums
2 liters of rum
1 kg of sugar
1 vanilla stick
2 pieces of star anise
First wash the fruit, remove the stalks and put them in the earthenware pot. Dissolve the sugar in the rum and then pour it over the fruit. Add the split vanilla bean and the star anise. The plums should be completely covered with liquid.
Cover the plum rum pot with foil and refrigerate at least until Christmas. Stirring occasionally.
Use of rum plums
The delicious fruits are suitable as a topping on ice cream, on pudding or as an accompaniment to game dishes. They can also be eaten solo. However, the alcoholized plums in particular have an unexpected effect. So enjoy with moderation!
