How to gently dry rocket
When drying arugula and other herbs, it is of course always important to preserve the precious ingredients as much as possible. Arugula is rich in vitamins A, C, E, and K, as well as B vitamins, some minerals (such as iron, zinc, potassium, calcium, and phosphorus) and antioxidants. So it would really be a pity to thoughtlessly give away these fabrics. For this reason, it is advisable to only dry rocket in the air, not in the oven, as is conceivable with other herbs and vegetables.
Here is our step-by-step guide to air drying arugula:
- Wash the arugula thoroughly with warm water.
- Dry the herb carefully - whether you dab it with kitchen paper or shake it in a sieve is up to you.
- Tie the arugula sprigs together in a bundle with string at the bottom.
- Hang the bundle upside down to dry in a dry and warm place.
- Wait seven to ten days.
- Carefully remove the bundle and check if the leaves are actually dry. If they rustle loudly when touched, you're dealing with dry arugula.
- Pluck the leaves from the stems.
- Chop the rocket or rub it through a sieve instead. The second is often the faster method.
Note: When dried, arugula does not taste as intense as when it is fresh. But salads, pasta and various potato dishes can be refined well with dried rocket.
Proper storage of dried arugula
Pour your dried arugula into an airtight jar. A screw-top jar or a simple jam jar can be used, provided it is absolutely clean and dry.

Ideally, use a darker glass to improve light protection and to be able to leave the jar outside of the cupboards or pantry.
