Early Savoy cabbage can be harvested as early as May

Early, middle and late Savoy cabbage varieties

Savoy cabbage is divided into three categories, which already say a lot about the harvest time:

  • Early varieties: Sowed from early/mid March to April and can be harvested from May or June
  • Medium varieties: Sowed from the end of March and harvested from June or July.
  • Late Varieties: Planted out from March to May and often harvested from September or October well into winter.

Early strains have a development time of 13 to 26 weeks, while late strains take up to 40 weeks to develop.

Harvest savoy cabbage gradually

Savoy cabbage can be harvested continuously if you do it correctly: always harvest the outer, lower leaves and leave the heart undamaged. Be sure to use a clean, sharp knife to avoid infection.

Harvest the whole savoy cabbage

Alternatively, you can of course also harvest the entire savoy cabbage. To do this, cut off the stalk cleanly just above the ground. You can store the savoy cabbage in the fridge for up to a week.

The specialty: winter savoy

Savoy cabbage is hardy down to -10 degrees and, with a little winter protection, survives German winters without any problems. This is where the winter savoy comes into play: Not only can later savoy be harvested well into February, there are also varieties that are only planted in October and are therefore ready to harvest in March. Ask your specialist shop for the appropriate seeds!

tips

Sow your savoy at the times indicated to prevent them from flowering. If it does start to develop flowers, harvest it as quickly as possible, because the development of the flowers will make it lose its taste.
