Indirect lighting: Indirect firing, on the other hand, works in a similar way to a grill, since the fire is located under the food during the preparation time. Here, however, constant monitoring of the embers is important in order to be able to add more wood if necessary. In addition, the Flammkuchen oven must have good air extraction via a chimney.
