Since soil and germs can also stick to densely grown cabbages, the vegetables should be washed thoroughly before processing. We explain how to do this in the following article.

Preparation of the cabbage
In order for the cabbage to be washed, it must first be prepared:
- Remove the outer, unsightly leaves.
- Quarter the head with a large knife.
- Now cut out the stalk at a slight angle.
- Depending on how the white cabbage is to be processed further, divide it again and cut or slice into fine strips.
Rinse the cabbage carefully
Opinions differ as to whether the very densely grown heads of cabbage need to be washed. However, since insects and grains of sand could also hide between the leaves, it is advisable to rinse the white cabbage at least briefly:
- Cut out the stalk and quarter the white cabbage.
- Fan the cabbage and wash all the leaves thoroughly.
If you want to process the white cabbage shaved, you can proceed as follows:
- Cut out the stalk and quarter the cabbage.
- Plane into strips.
- Place the vegetables in a coarse-mesh sieve and rinse carefully with lukewarm water.
- Place on a kitchen towel and pat dry. Smaller quantities can be spun dry with the salad spinner.
How do you recognize fresh cabbage?
- If you buy white cabbage directly from the producer, the head usually still has its dark green binders. These must not be wilted and should be intensely colored.
- If the white cabbage is very light in color, it can be assumed that the outer leaves have been removed again and again. These heads are probably cabbage that has been stored for a longer period of time and is no longer quite as fresh.
- The cabbage should be free of black spots. These indicate mold growth, which can also be found inside.
- Examine the outer leaves for feeding marks, burrows, and tiny bits of droppings. These come from subtenants who have made themselves comfortable in the Weißkraut.

If you are pregnant, you should definitely wash the white cabbage very thoroughly with lukewarm water. This is the only way you can be sure that there are no longer any dangerous toxoplasma or listeria on the vegetables.
