Probably every owner of a vegetable garden knows this: If the courgettes thrive, they produce far more fruit in a very short time than the family can consume. The vegetable can be preserved in a variety of ways, so you can eat zucchini from your own garden all winter long.

Delicious zucchini chips are easy to make yourself

Freeze zucchini

Send raw zucchini to cold sleep, keep for many months:

  1. Wash and dry the zucchini, remove the stalk and the beginning of the blossom.
  2. Cut into slices or cubes.
  3. Place in a sieve and mix with a little salt. This keeps the vegetables crisp after defrosting.
  4. Pack in portions in freezer bags or freezer containers and freeze.

Boil zucchini sour

Canned zucchini will keep for at least a year, provided you've worked properly.

Ingredients:

  • 1 kg zucchini
  • 2 onions
  • 4 cloves of garlic
  • 500ml of water
  • 250 ml mild vinegar
  • 150 grams of sugar
  • some peppercorns
  • salt
  • 1 tbsp medium hot mustard
  • optional: curry and paprika powder

Twist-off jars with an intact seal are suitable for canning. The vessels must be sterilized in boiling water for ten minutes before filling.

Preparation:

  1. Wash the courgettes, cut off the stalks and blossoms and cut the vegetables into bite-sized pieces.
  2. Peel the onions and cut them into rings.
  3. Peel and chop the garlic.
  4. Bring the water with the vinegar to a boil in a saucepan.
  5. Pour in the sugar and stir until all the crystals have dissolved.
  6. Add the spices and mustard.
  7. Add zucchini, onions and garlic to the broth and simmer for 15 minutes.
  8. Immediately pour hot into the jars, close and turn the jars upside down to cool.
  9. Check that a vacuum has formed everywhere.
  10. Label, store in a cool, dark place.

Dry zucchini

Zucchini can be dried wonderfully in the oven, dehydrator or in the air. To do this, wash the vegetables and cut them into 0.5 centimeter thick slices.

  • air dry: Thread the courgettes on string and hang them in a dry, airy place.
  • Drying in the oven: Spread the vegetables on a baking sheet lined with parchment paper. Turn the tube on to the lowest temperature and push in the zucchini. Stick a wooden spoon in the door so that the moisture can escape. Leave to dry for about ten hours.
  • Darren in the dehydrator: Place the zucchini slices on the grids and dry them at 45 degrees for six to seven hours.

tips

Before drying, you can soak the vegetables in water with a dash of lemon juice or vinegar. Then dry well. This way the courgettes will keep their light colour.
