Celeriac is an integral part of our kitchen. As a basis for soups or terrines, pureed as an accompaniment to meat or fish or breaded like a schnitzel, the versatile vegetables score points in many recipes. If you want to preserve the celery, you can pickle it and serve it cold with a snack or as a salad.

Celery is also delicious to pickle

Sweet and sour pickled celery

Ingredients:

  • 500g fresh celery, trimmed and diced, weighed
  • 200ml of water
  • 3 tsp vinegar
  • 2 tbsp sugar
  • a bit of salt

Some jars with screw caps. Make sure the seal is intact.

preparation

  1. Boil water with vinegar, sugar and salt and cook the celery in it for about 7 minutes. It should still be firm to the bite.
  2. Pour into previously sterilized containers while boiling hot and seal immediately.
  3. Turn over and let cool.
  4. This creates a vacuum and the celery stored in a cool and dark place will keep for a few weeks.

Put the celery in a salad and boil it down

ingredients

  • 3 kg celeriac
  • 2 onions
  • 1500 ml celery stock
  • 250 ml white wine vinegar
  • 100 grams of sugar
  • 20 grams of salt
  • some lovage leaves

You will also need a few twist-off jars with the screw cap intact.

preparation

  1. Boil the jars and lids in boiling water for ten minutes.
  2. Meanwhile, peel the celery and cut into 2 x 2 cm cubes.
  3. Cook the vegetables in plenty of salted water for about seven minutes until they are al dente.
  4. Peel and dice the onion and place in a bowl.
  5. Add salt, sugar, the chopped lovage leaves and the vinegar. Mix well.
  6. Remove the celery from the heat and drain through a sieve. Collect the cooking liquid and measure out 1500 ml.
  7. Add the celery water to the vinegar and spice mixture and stir everything together.
  8. Fill the celery cubes tightly into the glasses and pour the boiled stock over them.
  9. Close the jars immediately, turn them upside down and let them cool down.

To make the salad last longer, you can also boil it down:

  1. Place closed jars on the rack of the preserving machine.
  2. Pour in water until the vessels are halfway in the water bath.
  3. Wake up at 85 degrees for thirty minutes.

tips

The boiled celery tastes particularly delicious if you season it with a little oil and pepper after opening.
