From around the beginning of June, the elder starts to bloom in our gardens. You can use the intensively scented umbels in the kitchen to make a fine syrup. In autumn, the elderberries enrich the diet and provide many valuable vitamins and secondary plant substances.

Elderflower syrup is easy to make and very tasty

Make elderflower syrup

This is indispensable in "Hugo", a refreshing and very aromatic long drink.

Ingredients:

  • 30 elderflower clusters
  • 750 grams of sugar
  • 2 organic lemons
  • 2 liters of water

preparation

  1. Do not wash umbels, but leave them spread out briefly so that animal lodgers can escape.
  2. Then cut off the thick stems.
  3. Put the elderflowers in a large container with the washed, sliced lemons and fill up with water.
  4. Cover and leave in the fridge for two days.
  5. Strain through a sieve into a saucepan.
  6. Pour in the sugar and heat while stirring.
  7. Pour hot into previously sterilized bottles and seal immediately.
  8. Leave to cool upside down.

Elderberries contain valuable trace elements such as iron and potassium as well as a lot of vitamin C. Heated elderberry juice is a tried and tested household remedy that provides relief from a cold.

Only use black elderberry fruits, as dwarf elderberries are poisonous. Only collect the berries yourself if you can identify them with certainty.

  1. Wash the elderberries thoroughly.
  2. Pluck off the stalks, discarding unsightly fruit and the stalks.
  3. Put in a pot. Pour in enough water so that the bottom is well covered with liquid.
  4. Boil the elderberries for about five minutes. They must be soft.
  5. Place a cheesecloth or cheesecloth in a colander, set over a large bowl and pour in the berries.
  6. Drain off the liquid and squeeze out the fruit well, for example with a ladle.
  7. Pour the juice obtained into previously sterilized bottles.
  8. Close and place on the grid of the preserving machine.
  9. Pour in enough water so that at least half of the elderberry juice is submerged.
  10. Boil at 90 degrees for 30 minutes.

Prepared in this way, the elderberry juice will keep for three to six months.

If you wish, you can add 400 - 500 g of sugar to every two kilos of cleaned fruit. Boil the juice with the sugar and pour it into previously sterilized bottles while it is boiling hot. Due to the added sugar, the elderberry juice can be kept for up to nine months.

tips

From the obtained juice you can cook an aromatic jam. It tastes very good if you use half elderberry and another fruit such as apple or pear for the jam.
