Cucumbers can be easily preserved by boiling them down. The aromatic broth and spices give the cucumbers a great aroma. The healthy snack goes wonderfully with a cold dinner, but can also be added directly to other salads due to the sour taste.

The necessary utensils

Preserving is very sustainable, because in addition to a preserving pot, you only need reusable glasses. Well suited are:

  • Jars with glass lids, rubber rings and metal clasps
  • Jars with twist-off lids

It is important that all vessels and lids are sterilized in boiling water for ten minutes before filling. Alternatively, you can also do this in the oven:

  1. Preheat tube to 140 degrees.
  2. Place jars and lids on a baking sheet.
  3. Place in the oven and leave in for ten minutes.

Spicy pickled cucumbers

Due to the variety of spices, the boiled cucumbers taste very aromatic.

ingredients

  • 5 - 6 cucumbers
  • 2 large green onions
  • 500 ml apple cider vinegar
  • 500ml of water
  • 100 grams of sugar
  • 20 grams of salt
  • 2 tsp mustard seeds
  • 1 tsp black peppercorns
  • 1 tsp dried dill
  • 5 bay leaves
  • 5 juniper berries
  • ½ tsp chilli flakes

preparation

  1. Wash the cucumber thoroughly, cut in half, deseed and cut into slices about half a centimeter thick.
  2. Peel the onion and cut into fine rings.
  3. Layer the cucumbers in the jars, placing the onion rings evenly between them.
  4. Place all other ingredients in a large saucepan, bring to the boil and simmer for a minute.
  5. Pour the broth over the cucumbers, making sure that there is a 2 cm border at the top.

Boil the cucumbers

Preserving the cucumbers extends their shelf life.

  1. Place the jars next to each other on the rack of the preserving machine. They must not touch.
  2. Pour in enough water so that the vessels are halfway submerged. # Cook at 85 degrees for 30 minutes.
  3. Remove with the glass lifter and let cool.
  4. Check that a vacuum has formed in all jars. To do this, carefully lift the jars by the lid. With twist-off jars, you can recognize this by the lid that is pulled inwards.
  5. Label, store in a cool, dark place.

tips

Do not use overripe cucumbers for canning. Despite the sterile process, it can happen that these begin to ferment in the glass. This will render the entire contents inedible.
