You can easily cultivate the salad rocket in your own garden. When pruned with care, the arugula will sprout again and again, so you can harvest the aromatic leaves throughout the season. Rocket can be used not only for pesto, but also for many extremely tasty dishes, as our recipe ideas prove.

Potato salad with feta and rocket

This salad goes well with roasted meat or grilled food.

Ingredients for 4 servings

  • 750 g waxy potatoes
  • 250g feta
  • 200 g arugula
  • 2 onions
  • 5 tbsp olive oil
  • 3 tablespoons wine vinegar
  • 1 tsp mustard
  • salt and pepper to taste

preparation

  • Wash and boil potatoes until soft.
  • Allow to evaporate briefly and peel.
  • Squeeze through a potato harp or cut into thin slices.
  • Wash the rocket, spin dry and cut off the stems. Pluck into bite-sized pieces.
  • Peel onions and cut into fine rings.
  • Dice the feta.
  • Whisk together olive oil, vinegar, mustard, salt and pepper to form a marinade.
  • Mix with the potatoes.
  • Carefully fold in the feta cheese, onions and rocket.

Fine rocket soup

Serve fresh baguette with this soup, which pleasantly underlines the spicy aroma.

Ingredients for 4 persons:

  • 200 g mealy potatoes
  • 350 g arugula
  • 1 onion
  • 1 clove of garlic
  • 1 tbsp sunflower oil
  • 800 ml vegetable broth
  • 200 ml whipped cream
  • salt and pepper
  • 2 tbsp sour cream

preparation

  • Wash potatoes, peel and cut into small cubes.
  • Peel and dice the onion.
  • Peel garlic.
  • Sauté the onion in the oil until translucent, press the garlic through the press and add.
  • Add the potato cubes and deglaze everything with the vegetable broth.
  • Simmer gently for about 15 minutes.
  • During this time, wash the rocket, cut off the tough stems and roughly chop two-thirds of the leaves.
  • Add them to the soup towards the end of the cooking time and leave to stand for a moment.
  • Finely puree everything with a hand blender.
  • Add cream and season the soup with salt and pepper.
  • If necessary, thicken a little more.
  • Arrange on plates, top with a dollop of sour cream and decorate with the remaining rocket leaves.

tips

Arugula can also be used on its own in a salad. Wash the leaves, remove the stems and tear the greens into bite-sized pieces. Dress them up with vinegar, walnut oil, salt and pepper and sprinkle the rocket salad with toasted pine nuts.
