Peach sauce is a treat not only enjoyed by children. Desserts or morning muesli can be refined with the wonderfully aromatic puree. It is suitable as a fruity cake ingredient and gives savory dishes a special touch. Peach sauce can be preserved for many months and you can always fall back on a portion of "summer taste from a glass".

Ingredients for the peach sauce
- 2 kg fully ripe peaches
- 1 lemon, just the juice
- 300ml of water
- 1 vanilla bean
If you like, you can sweeten the peach puree with a little sugar or honey.
For cooking you need:
- Twist-off jars or mason jars with lids, rubber rings and metal clips

Alternatively, you can preserve the peach puree in the oven.

Since the peach peel is difficult to pass through, the fruit is first skinned:
- Fill a large saucepan with water.
- Bring to a boil.
- Blanch peaches for three minutes.
- Now you can peel off the peel with a kitchen knife.
Now sterilize the glasses for 10 minutes in boiling water and let them cool down upside down on a tea towel.

- Halve the fruit and remove the stone.
- Place the peaches in a saucepan with the water and lemon juice.
- Scrape out the vanilla bean.
- Add the pod and pulp to the peaches.
- Bring to the boil and simmer gently for 20 minutes.
- Remove the vanilla pod and puree the hot mush with the hand blender.
- Now taste the peach puree. If it's not sweet enough for you, you can add some sugar or honey.
- Heat briefly again.
- Immediately pour into the sterilized jars using the funnel (€4.85). At the top there must be a border of at least one centimeter wide.
- Wipe the edge clean and seal.
Cooking the peach sauce
- Place jars on the rack of the preserving machine.
- Pour in the water so that the vessels are three-quarters immersed in the liquid.
- Boil for 30 minutes at 90 degrees.
If you want to preserve the peach puree in the oven, proceed as follows:
- Place glasses in the drip tray, they must not touch each other.
- Pour three inches of water.
- Slide into the tube on the bottom rail.
- Switch on the oven to 180 degrees top and bottom heat.
- As soon as the water in the dripping pan begins to simmer, turn off and leave the jars in the oven for another 30 minutes.
tips
It tastes very delicious if you enrich the peach sauce with two to three ripe bananas. Since the fruits bring a lot of sweetness, you can usually do without the added sugar.
