If a new superstar was chosen on the salad plate in Germany, rocket would have a good chance of winning first place. The arugula, originally from the Mediterranean region, is not only used in spicy salads, it is also extremely good on pizza or pasta. The leaves should be washed thoroughly before consumption, as pollutants and dirt can adhere.

Step 1: Sort arugula before washing
- First, pick out yellow, withered or unattractive leaves.
- Cut off the stems. These must not be consumed. They contain a lot of nitrate, which is converted into harmful nitrite in the body.
Step 2: Wash rocket
- Fill the sink with water.
- Add the leaves and gently move them around with your hands.
- Before further processing, the rocket should be relatively dry. Shake the colander a few times, then transfer the greens to a kitchen towel. Gently blot the leaves.
- To remove even more moisture, you can spin the rocket dry in a salad spinner.
- Pluck or cut large leaves into small pieces.

- When buying, make sure that the rocket leaves look juicy green and don't have any wilted spots.
- Small leaves taste much milder than large ones. They are also more delicate.
- Arugula wilts very quickly and will only keep for a day or two in the refrigerator. Store the rocket wrapped in a damp kitchen towel in the vegetable drawer until ready to eat.
Arugula is quite bitter
The bitter taste of rocket is not for everyone. If you want to soften the aroma, you can wash the rocket in lukewarm water or blanch it briefly.
