When the currants ripen, you can usually harvest a lot of fruit within a short time. These can be frozen or made into jam. Another variant of preservation is to boil down healthy currant juice.

You can juice and preserve currants relatively easily without a juicer.

ingredients

  • 1 kg of fresh currants
  • 500ml of water
  • 200-400g of sugar

  • 2 large saucepans

  • Sterilized juice bottles with matching closure

preparation

  1. Use a fork to remove the currants from the panicles and wash thoroughly.
  2. Heat the water in the saucepan and add the currants.
  3. Bring to a boil and continue to simmer until all the berries have burst.
  4. Pour through a sieve into the second saucepan, squeezing out the flesh with a ladle.
  5. Pour through the cheesecloth back into the first saucepan.
  6. Boil juice and add sugar.
  7. As soon as the sugar crystals have dissolved, pour the hot juice into the previously sterilized bottles.
  8. Close tightly immediately.
  9. Let cool and store in a dark, cool place.

Obtain juice with the juicer

This method is gentler because more of the currants' valuable ingredients are preserved. Water is filled into the lower part of the device and the berries are placed in a sieve insert. The water is heated and steam rises, which loosens the liquid from the berries. In order for the juice obtained in this way to be durable, you must also boil it down.

Pasteurize currant juice

Mix the juice with 250 - 500 g sugar per kg of berries and stir until the crystals have dissolved. Then pour into sterilized juice bottles.

  1. Place opened bottles in a roasting pan and pour in about three centimeters of water.
  2. Cook in the oven at 75 degrees for 20 minutes.
  3. Close immediately.

Currant juice freezes well. This makes sense if you want to prevent valuable ingredients from being destroyed by the heating required for sterilization. Even those who want to do without sugar can use this way of preserving blackcurrant juice.
