Ginger is very popular because of its positive effects on health and the pleasantly aromatic aroma. Unfortunately, the tubers lose their taste if they are stored for a longer period of time. You then get a biting sharpness that overshadows the fine aroma. Fresh, turgid ginger bulbs can easily be boiled down and preserved in this way.

Despite the sugar content, you can also flavor savory foods with this preserved ginger. Try it - it tastes great!
ingredients
- 350 g peeled ginger
- 350 g preserving sugar 1:1
- Jars with twist-off lids
preparation
- Sterilize the jars in boiling water for 10 minutes and drain on a kitchen towel.
- Finely dice the ginger.
- Puree half of the ginger with the hand blender.
- Boil everything together with the jam sugar and simmer for a few minutes.
- Test the jelly: Put 1 teaspoon of the ginger jam on a small plate. If the mixture is firm after a minute, you can pour the ginger into the jars while it is boiling hot.
- Close immediately and turn upside down.
- Stored in a cool, dark place, the preserved ginger will keep for a few months.
Additional boiling in a wake-up pot or oven is not necessary, since the ginger is preserved by the sugar.
Put ginger
What would sushi be without delicious pickled ginger. Gari is very easy to make yourself.
Ingredients:
- 400 g fresh ginger
- 200 ml rice vinegar
- 4 tbsp sugar
- 2 tsp salt
- small jars with twist-off lids
preparation
- Peel the ginger and cut into very fine strips.
- Spread the ginger slices on a cutting board and sprinkle with salt.
- Put the rice vinegar and sugar in a saucepan and bring to a boil.
- In a second pot, bring water to a boil and blanch the ginger.
- Drain and pour the ginger into the glasses.
- Pour the hot vinegar liquid over it and close immediately.
- Leave for about a week.
Pickled ginger can be kept for at least a year in a dark, cool place.
tips
You can prepare a very tasty ginger tea from the sweet ginger paste. Simply put one or two teaspoons of the paste in a cup and pour hot water over it.
