Preserving is currently experiencing a renaissance. No wonder, since it is a very safe and uncomplicated method of preserving fruit. We explain to you which tools you need. You will also find a basic recipe for canned fruit in the following article.

It is important that the jars are sterilized before they are preserved

The right glasses

Various types of glasses are suitable for preserving:

  • Mason jars with glass lid, rubber ring and loose metal clasp,
  • Jars with twist-off screw caps,
  • Glass jars with permanently attached metal clasp, glass lid and rubber ring.

All parts must be heat resistant and free from damage.

Cleanliness is the top priority

Before boiling, the vessels are thoroughly sterilized. This is important because there must be no germs on the jars and lids. Place the clean utensils on a cloth to drain.

How does cooking work

  • By heating the food in the water bath of the pressure cooker or in the hot, humid air of the oven, the bacteria that adhere to the food are killed.
  • The heat causes the air in the jars to expand. This contracts again when it cools down. The lid is sucked in by the resulting vacuum and the food is hermetically sealed.

basic recipe

ingredients

  • 1 kg of perfect fruit, washed and cut into bite-sized pieces
  • For sour fruits, 200 to 300 g of sugar
  • For sweet fruit, 100 to 250 g of sugar
  • 1 liter of water

Cooking in the oven

  1. Boil the water and sugar in a saucepan and allow to cool.
  2. Meanwhile, prepare the fruit and layer it in the glasses.
  3. Fill up with sugar solution. The fruit should be completely covered. Leave a margin of at least two centimeters at the top.
  4. Put on or screw on the cover.
  5. Place in a roasting pan, the vessels must not touch.
  6. Pour two to three centimeters of hot water.
  7. Place in the oven on the lowest rack.
  8. Heat at 160 - 175 degrees until bubbles appear.
  9. Turn off and leave the jars in the oven for another 30-40 minutes.
  10. Remove, allow to cool and then check that all lids are tightly closed.

Cooking in the wake-up pot

The fruits are prepared in the same way as described in the previous recipe. It continues as follows:

  1. Place jars on a wire rack in the saucepan.
  2. The vessels must not touch each other.
  3. Pour in enough water so that the glasses are at least ¾ full.
  4. Switch on the pot according to the instructions in the instructions. In this you will usually also find the required preserving time, which depends on which fruit you are preserving.
  5. Then immediately lift the jars out of the pot with the jar gripper.
  6. As soon as the jars have completely cooled down, do the "lid test". Carefully lift each jar by the lid. If this works, the fruit is hermetically sealed.

tips

Proper storage is important to ensure that preserved fruit has a long shelf life. Store the glasses in a cool, dry and dark place, preferably in a basement.
