Wild garlic has been all the rage for a number of years. You can collect the fresh leaves from mid-March to mid-April, so the season is relatively short. The wild garlic can be processed into a paste and easily frozen, so that you can fall back on the delicious herb all year round.

Wild garlic pesto freezes wonderfully

Prepare wild garlic paste

Ingredients:

  • 200 g fresh wild garlic
  • 100 ml sunflower oil
  • 10 grams of salt

preparation

  1. Wash wild garlic thoroughly and pat dry.
  2. Cut off thick stems.
  3. Place leaves, oil and sea salt in a tall container.
  4. Mix everything with the blender until a creamy mass is formed.

Alternatively, you can prepare the wild garlic paste in the blender.

Freeze wild garlic paste

Put the wild garlic paste in an ice cube tray and let everything freeze in the freezer. In this way, the frozen wild garlic can be easily portioned.

If you usually need smaller amounts of the mixture, put it in a freezer bag and flatten it out. After freezing, you can break off the wild garlic in pieces and use it very sparingly in this way.

Wild garlic paste can also be frozen directly in the jar:

  • Pour paste into small containers.
  • There should be enough space at the top, as the mass expands in the freezer.
  • unscrew the lid.
  • Place in the freezer and let freeze through.

How can the frozen wild garlic paste be reused?

The paste is the basis for many delicious dishes. Add toasted, ground pine nuts, freshly grated parmesan, and a little olive oil for a flavorful pesto that tastes wonderful with pasta.

Mix a little wild garlic paste with cream cheese, quark and other herbs to create an aromatic dip. Serve with baked potatoes, raw vegetables or crackers.

Finely dosed, wild garlic paste underscores the aroma of soups and sauces. You can also add the paste to bread dough or use it as a spice for wild garlic pasta or spaetzle.

Wild garlic makes no special demands on the soil and light conditions. The herb can therefore be cultivated in almost any garden. A sparsely overgrown place under a tree is ideal, where the bulbs are placed about five centimeters deep in the ground in autumn.
