When preserving, cauliflower layered in jars is preserved by heat. This is not only worthwhile for garden fans with their own vegetable patch. In the season from April to October, the delicious vegetables are significantly cheaper and also taste more aromatic.

Before canning: Sterilize jars

Jars with a glass lid, rubber ring and clip are just as good for preserving as twist-off jars or jars with a rubber ring and swing top. Make sure that the containers and rubber bands are undamaged. It is also important that you carefully sterilize all vessels.

  1. Take a large saucepan and fill it with water.
  2. Add jars, rubber rings and lids.
  3. Bring the water to a boil and leave the jars in it for some time.
  4. Take everything out with tongs and leave to dry on a clean tea towel.

Recipe for sweet and sour cabbage florets

Ingredients for 3 - 4 glasses of 500 ml each:

  • 1 kg of cauliflower
  • 500ml of water
  • 250 ml white balsamic vinegar
  • 250 grams of sugar
  • 50 grams of salt
  • 1 tbsp mustard seeds
  • 3 cloves of garlic
  • 2 bay leaves
  • 1 g citric acid

preparation

  1. Wash the cauliflower, cut out the stalk and divide into small florets.
  2. Fill a large saucepan with water, add the citric acid and bring to a boil. Blanching with this antioxidant keeps the cauliflower nice and white.
  3. Drain and layer tightly in mason jars. There should be about two centimeters of space left at the top.
  4. Boil water with balsamic vinegar, sugar and spices.
  5. Pour the hot liquid over the cauliflower. Use the handle of a spoon to loosen any bubbles in the glass.
  6. Wipe the edge of the glass, put on the rubber ring and lid and put on the clip.
  7. Place on a rack in the saucepan. Pour in enough water so that the glasses are three quarters in the water bath.
  8. Cook for 90 minutes at 100 degrees.
  9. Allow glasses to cool, remove clamps.

Preserves are also a great gift for loved ones. It looks extremely pretty if you alternate layers of cauliflower and broccoli instead of just cauliflower. All other steps correspond to those in the recipe above.
