What to do with all those delicious berries that ripen during the summer months? Especially in years with a good harvest, space in the freezer quickly becomes scarce. Our tip: simply boil the fruit.

Preserving berries is not difficult at all

The right glasses

You can use different jars for preserving:

  • mason jars: These have a rubber ring on which a lid is placed. They are only additionally closed with a metal bracket during the boiling process.
  • clamp lenses: With these, the lid is connected to the glass by means of a wire frame. Here, too, a rubber ring ensures an airtight seal.
  • Twist-off lenses: These are closed with a screw cap. They're not great for preserving berries unless you want to make berry jam.

Boiling the berries

Pay attention to good hygiene when waking up so that germs do not accidentally get into the glass. Therefore, sterilize all utensils by placing the jars, rubber rings and lids in a pot of boiling water for at least five minutes. Alternatively, you can sterilize the glasses for about 10 minutes at 120 degrees in the oven.

  1. Wash berries thoroughly and discard any spoiled fruit.
  2. Weigh fruit so that the quantities in your recipe are not falsified.
  3. Put the berries in the cleaned glass.
  4. Seal and place in a large alarm pot two-thirds full with water.
  5. Bring everything to a boil.
  6. After the time specified in the recipe has elapsed, leave the jars in the hot water for at least ten minutes.
  7. Take out and let cool. This creates a vacuum.

Recipe: Preserved Berries

Ingredients:

  • 1 kilo of any berries
  • 1 liter of water
  • 300-400g of sugar

preparation

  1. Prepare glasses and fruit.
  2. Fill sterile glasses with the berries, leaving about three centimeters of space at the top of the glass.
  3. Put the sugar and water in a saucepan and heat while stirring. The syrup should boil once.
  4. Pour the still hot sugar water over the fruit. These must be completely covered.
  5. Wipe edges clean and immediately seal with lids.
  6. Place on a wire rack in the pressure cooker or large saucepan.
  7. Fill with water so that the glasses are about two thirds in the water bath.
  8. Boil at 80 degrees for about 30 minutes.
  9. Let the glasses cool down slowly.

If you don't have a suitable pot for preserving, you can also pickle the berries in the oven. Prepare the fruit, fill them into glasses and pour sugar water over the fruit. Place in a casserole dish with at least 2 centimeters of water and cook for 30 minutes at 150 degrees.
