Jerusalem artichoke soup with turmeric

The nutty taste of Jerusalem artichoke harmonizes perfectly with the mild, slightly bitter spiciness of turmeric. It warms you up after a long winter walk and provides lots of vitamins and trace elements.

Ingredients for 4 servings

  • 400 g Jerusalem artichoke
  • 1 leek
  • 2 carrots
  • 100 grams of potatoes
  • 1 onion
  • 2 cloves of garlic
  • 20 grams of coconut oil
  • 400 ml vegetable broth
  • 250 g coconut milk
  • 1 walnut-sized piece of ginger
  • 2 tsp turmeric powder
  • 1 tsp curry powder
  • salt to taste

preparation

  • Wash and clean vegetables.
  • Dice Jerusalem artichokes, potatoes and onions, slice carrots and cut leeks into rings.
  • Heat coconut oil and sauté onion until translucent.
  • Add the finely diced garlic and vegetables to the pot and sauté briefly.
  • Deglaze with vegetable broth.
  • Add the coconut milk and spices and cook until the vegetables are soft, about 15 minutes.
  • Puree with a hand blender and season again.

Jerusalem artichoke patties with horseradish dip

Quickly prepared, these buffers are a full meal. They also taste great as an accompaniment to roasted meat. In this case, half the quantity is sufficient.

ingredients for 4 persons

patties

  • 1 kg Jerusalem artichoke
  • 1 onion
  • 50 g sunflower seeds
  • 3-4 tablespoons flour
  • 2 eggs
  • 2 tablespoons oil
  • salt and pepper to taste

horseradish dip

  • 250 grams of ricotta
  • 100 grams of yoghurt
  • 3 tsp horseradish from the jar
  • 1 tsp paprika powder
  • ½ teaspoon each of pepper and salt

preparation

  • Wash, peel and coarsely grate Jerusalem artichoke and onion.
  • Mix with the eggs, sunflower seeds, spices and flour to create a viscous mass.
  • Heat oil in a pan.
  • Shape into small patties and fry until crispy.

Mix all the ingredients for the dip in a bowl and serve with the patties.

As healthy as Jerusalem artichoke is, the intestinal flora has not yet gotten used to the roughage, which can lead to unpleasant flatulence or diarrhea. For this reason, eat no more than half a tuber at first. You can, for example, process them together with potatoes to make a puree or nibble on them peeled and raw. Once the digestion has gotten used to the roughage, the unpleasant side effects no longer occur.
