Parsnips are a sweet and aromatic root vegetable with lots of starch and sugar. When growing parsnips, the timing of sowing is critical to harvesting the parsnips for fresh consumption or as a winter vegetable.

Proper soil preparation and sowing depth
For a harvest during the typical parsnip season in September, sowing between March and May on deeply loosened soil is advisable. Parsnips sown in June can be harvested before winter or left in the ground throughout the winter. After sowing in rows 30-50 cm apart, the seeds need about 3 weeks to germinate, then they are thinned out to about 5-10 cm apart.
tips and tricks
In order not to lose track of your parsnip culture and possibly emerging weeds, the rows can be loosened up with radishes sown in between. These help with orientation in the vegetable patch and are harvested when the parsnips need more space.
